Hunt’s Signature Recipe Collection: Tomato and Bacon Tortellini –
I do lots of family cooking and entertaining because I love to cook and entertain. I also do lots of cooking for my Mom, Rita… almost 88 years old and still active and spry, but she doesn’t enjoy cooking just for herself anymore.
But there’s a “but” to to all this cooking.
The BUT is that I want to be in on all the fun and action of a pickup basketball game, a bike ride, a run, a swim, a game of backyard volleyball, badminton, croquet or Slip n’ Slide with my kids and 9 grandkids. I want to take my Mom for ice cream Sundaes, to the theater, for a cup of coffee, fashion hauling (her favorite activity!), and to as many great-grandkids’ things as possible.
I want my cookin’ to be fabulously healthful, nutritious, delicious and EASY, so I’m out and about, not the lady in the kitchen.
I love having my Mom at my home for all of the family activities, and I especially enjoy packing up and delivering beautiful, healthful meals to her, too. This is my joy…
This is why I turn to Hunt’s and the Hunt’s Signature Recipe Collection.
Take yesterday, for example. It was one of those rare days that I didn’t have a million things on my to-do list. I took a nice morning run and marveled at my Hydrangeas and rows of Rose of Sharon as they cling to branches and wait for Spring; magnificent colors waiting, waiting, under their winter cover…
I decided that it was a good day to add some color and flavor to my day by way of cookin’ up a colorful feast and a train of “deliveries” to my Mom.
Hunt’s Tomato and Bacon Tortellini, with its red tomatoes, green peas and bacon combined with cheese tortellini in a beautiful creamy sauce was a good place to start. (I simultaneously cooked up Hunt’s Cheesy Chicken and Pasta Casserole, which is a post for another day. Yes, I created 2 delicious meals simultaneously; that’s how easy Hunt’s Signature Recipes are.)
Hunt’s Diced Tomatoes with Basil, Garlic and Oregano and Hunt’s Tomato Sauce with Basil, Garlic and Oregano bring perfect color and perfect seasonings to this recipe; and all I have to do is open the cans. Hunt’s peels ripe tomatoes with FlashSteam – no chemicals – and packs them in their own juices. Easy and delicious.
Cook the bacon, cut into 1/2 inch pieces.
Drain bacon and save. Use 1 tablespoon bacon drippings and add 1 tablespoon fresh, minced garlic…
Add Diced Tomatoes, Tomato Sauce and water. Bring to a boil…
Stir in frozen tortellini. Return to boil for 6 minutes.
Add 1/2 cup chive & onion soft cream cheese. Stir until blended. Add 16 oz. frozen peas. Add saved bacon pieces.
Simmer 2 minutes. DONE. 25 minutes from start to finish while cooking Hunt’s Cheesy Chicken and Pasta Casserole at the same time!
A peek at both Tomato and Bacon Tortellini and Cheesy Chicken and Pasta Casserole, so colorful, aromatic and yum… I’m suddenly very hungry for lunch!
And let’s not forget the meals for my Mom…
