Indoor tailgating with Hunt’s Signature Recipe – Bruschetta Chicken Grill…
There’s nothing quite like the culinary fun and excitement of tailgating at a football game, but the BCS National Championship was being played in Miami and we were here in Rhode Island with our outdoor grill under ice… so, the word of the day was improvise.
Thanks to help from my go-to favorite Hunt’s and its easy, quick, delicious and hearty Signature Recipe Collection, my indoor tailgate was a snap.
My game menu was everything I needed to score a cooking touchdown. Here’s my main course:
1. Hunt’s Italian Vegetable Pasta Salad – a pasta salad combining pasta with kidney beans, tomatoes, zucchini and carrots in an Italian dressing
2. Hunt’s Bruschetta Chicken Grill – chicken, marinated in balsamic vinaigrette with tomato paste, then grilled, placed on toasted bread and topped with a diced tomato mixture
I mixed up the Italian Vegetable Pasta Salad a day ahead and let it refrigerate. Quick. Easy. (And you get all your veggies in.)
And the Bruschetta Chicken Grill was… well, home field advantage perfect. Here’s how:
I took a few moments on game morning to mix up the chicken marinade – some balsamic vinaigrette dressing with Hunt’s Tomato Paste, then poured over boneless, skinless chicken breasts and popped it into the refrigerator. Easy.
In just a few more quick moments, I stirred together Hunt’s Diced Tomatoes, vinaigrette dressing, a bit more Tomato Paste, onions, basil and garlic for the tomato topping… and into the refrigerator it went until tailgate time. I’m practically in the end zone!
What I love about Hunt’s Tomato products is how easy, accessible and healthy they are. Hunt’s takes care of the tomato part for me with its freshly-picked 100% FlashSteam goodness. I feel very good about this.
With the Bruschetta Chicken Grill recipe, I can go about my day knowing that dinner is already in forward progress. All that’s left at dinner time (or indoor tailgating time!) is removing the chicken from the marinade and grilling it for about 12 minutes…
While Barry is grilling, I toast the Italian bread Bruschetta-style and take the tomato topping and Italian Vegetable Pasta Salad from the refrigerator. I’d say we’re in possession of dinner perfection…

I went shopping and bought cans and cans of Hunts tomatoes because they have no salt added diced with the basil.
Since I was there, I can attest to the fact that this was a hit! Seriously delicious. Can’t wait to have it again!

So, I can’t stop looking at the grill pan Barry is using in the shot with the chicken. I have an electric glass top range and am always challenged to find the right tool for grilling indoors. It’s not always good weather for standing on our deck, especially in January. 🙂
