There are 2 things I love and when they come together – it’s amazing. One – pesto. I love pesto so much and it’s something that I’ve been trying to get my husband to make me for years! And I love chicken. We cook chicken at least 2 or 3 times a week! I just love it, so when these 2 things come together? It’s AMAZING. I’ve been hunting for a Baked Pesto Chicken Recipe. I don’t know about you, but come dinner time, after working all day, I want to prepare something quick and easy. I often just grab chicken breast, toss them in some panko and bake them. Super simple and the entire family enjoys it…until they’ve been chickened-out. “Not chicken again!” For the love of my family I decided to change it up a bit. I wanted something easy, but something I’ve never really done before. I had some pesto left over from a pasta dish I had made so I decided to make a pesto chicken and top it with fresh mozzarella. It was delish! My husband had seconds! Next time I hope to make my own pesto using basil from the garden.

Ingredients for Baked Pesto Chicken Recipe

Ingredients:
Boneless chicken breast
Pesto
Fresh mozzarella

Step by Step for Baked Pesto Chicken Recipe

Preheat the oven to 400°
Rub pesto over the chicken breast and top with a generous slice of fresh mozzarella. Sprinkle with a little bit of black pepper.
Bake until cooked through, 15-20 minutes. I used small organic chicken so they were done in about 15 minutes.

Serve as is or on ciabatta bread. Maybe top it with some marinara. Either way, it’s super flavorful and dinner is on the table in under 30 minutes.
