Gazpacho Soup

Gazpacho Soup is a recipe that I absolutely love to make! I have a great one from Hunt’s Signature Recipe Collection – Easy Gazpacho that’s no bake! Let me repeat – no. bake. It’s fabulous and really amazing!  I woke up Tuesday morning to a lovely blanket of New England snow – which I don’t hate, but it’s COLD!!! Gazpacho Soup just seemed like the right thing to make!

But that was not going to stop me from thinking summer by registering for a Sprint Triathlon, heading to our local college pool for a swim, running 4-miles AND whipping up some Easy Gazpacho, a fabulously colorful, healthy-ch0ck-full-0f-veggies easy Hunt’s Signature Recipe Collection favorite of mine.

I love Hunt’s Gazpacho Soup because it’s a combination of fresh veggies with tomatoes for a quick no-cook soup…

Look at all of those fresh veggies– cucumber, yellow bell pepper, onion, Hunt’s Tomato Sauce and the FlashSteam Freshness of Hunt’s Petite Diced Tomatoes.  I know that Hunt’s uses FlashSteam® – not chemicals – to peel its diced, whole, stewed, and crushed tomatoes. I love this, as a cook, a fitness enthusiast and a Mom and Grandma.  To me, Hunt’s is summer in a can!

Hunt’s Easy Gazpacho is so easy and quick (10 minutes quick) that all I need for directions is my cell phone.

Add some water, olive oil, red wine vinegar, garlic powder and a ground red pepper kick

Then pop the summery colorful creation into the fridge and head out on my run.  I’d call that a no-cook soup!

The fun thing is how my Easy Gazpacho inspired me to really think summer in the grips of January, from what I chose to wear to the colors I discovered while out on my winter run…

4 miles of colors while thinking about my delicious and nutritious Gazpacho lunch waiting for me at home; and an additional treat is that my husband Barry had come home to take me to lunch.

“Thanks, Honey, but look what’s not cookin’!”

This called for a quick change of clothes for a dining room lunch date with my husband…
