Easy Nachos Recipe – Reuben Nachos

NACHOS! They are – well, everything! There are so many ways to make nachos and I’m always looking for an easy nachos recipe. We’re big fans of nachos in our house and not just because my husband makes salsa. OK – that helps! We’re big fans of nachos because they’re simple to make and also yummy to eat. It’s that simple! Since I do have 5 kids with all different tastes and likes, I’m excited to share with you a fun and easy nachos recipe that my friend Sheri McShane is sharing with me today!

So this is what I love about this recipe, it’s a REUBEN! I’m obsessed with a reuben sandwich and never would’ve thought to make nachos! If you’re not familiar with a Reuben – it’s an American grilled sandwich composed of corned beef, Swiss cheese, sauerkraut, and Russian dressing, grilled between slices of rye bread. It’s amazing I mean – you take one bite and you’re head over heels! So when Sheri sent along this recipe for nachos? I was floored! Yes. Yes. Yes.

Ingredients for Easy Nachos Recipe – Reuben Nachos

Bag of Rye bagel chips

Corned beef (chopped or shredded)

Sauerkraut

Swiss cheese

Chopped dill pickles (optional)

Thousand Island dressing (any brand)

Easy Nachos Recipe – Step by Step

  1. Preheat oven to 425℉

  2. In a baking dish, lay out layer of chips.

  3. Add some corned beef, sauerkraut, pickles, and swiss.

  4. Drizzle layer with thousand island dressing.

  5. Create another layer.

  6. Sprinkle with a little bit of black pepper

  7. Bake for 10-15 minutes, until cheese is melted.

These are melt in your mouth delicious! They are simple and easy to make at home for a party or a family gathering or even just for Friday Nigh Movie Night! They really are sensational and are a quick fix for a feast!
