With the summer around the corner, it’s time to find some super easy recipes for dinner (and even lunch, too!). I love finding recipes that the kids will love and enjoy. I feel like anyway I can get everyone on board over something, it’s a win win! I’m sharing today on the blog an easy chicken fajitas recipe for you to try out. You will love this because it’s a great way to bring in chicken and veggies in a fun way. The kids love to assemble things when it comes to dinner, so this recipe (if your kids are like mine!) will be a great big hit!
Easy Chicken Fajitas
This is what I love about an easy chicken fajitas recipe. I love being able to bring in some colorful veggies to a meal. I feel like in the summer it’s the easiest and the best way to go. I also love that my kids love to dress up their fajitas in a variety of ways! I love seeing them put on all different kinds of toppings – cheese, salsa, guacamole, sour cream, tomatoes, lettuce, etc! I feel like whatever your kids like, have on hand for them to create their own perfect creations. I love that it’s that easy for kids to be involved, eat what they want to eat and have a yummy and delish meal! It’s also the EASIEST way to do dinner because nobody is complaining!
Are you ready to see how easy it is to make these easy chicken fajitas? You need to make sure you have these items on hand! And you can add anything on the side that you want to add!
Ingredients for Easy Chicken Fajitas:
1lb Boneless chicken breast
2 bell peppers (your choosing)
1 large onion
1 packet fajita seasoning
Olive oil
Flour tortillas
*For toppings for fajitas: shredded cheese, salsa, guacamole, sour cream, tomatoes, corn salsa, lettuce, diced onions, etc. You just need to make sure you have what you what on them! I love putting everything in little bowls and having the Squeezable sour cream from HOOD. It makes it so much easier to have everything ready to go! I love being able to make it as easy as can be for me! I hate seeing it become difficult. As soon as anything dinner related is difficult, I wave the white flag! I don’t want hard, I want easy. I want doable and practical. These are all that and then some!
Ready to walk through the steps for the Easy Chicken Fajitas? These are fajitas you make at home, so get ready to be able to have some yummy smells wafting through your house. Sometimes my husband will grill the chicken and veggies outside, but I personally love smelling the smells! It’s nice for me! I personally think it’s a wonderful way to be able to bring in a fun dinner and have everyone in the house know what’s going on! LOL! 🙂
OK – here are the steps:

Turn on your broiler.

Line a baking sheet with aluminum foil for easy cleanup.

Slice the peppers and onions and place in bowl. Drizzle with a couple of tablespoons of olive oil and use half of the season packet to season the veggies.

Put veggies on two thirds of the baking sheet and put under broiler for 10 minutes.

While veggies are cooking, slice chicken into strips (you can do steak if you wish or both). Drizzle with olive oil and season with the rest of the packet.

Take pan out of the oven after the first 10 minutes and add the meat. Broil for another 8-10 minutes until the chicken is cooked through.

During the last minute or two of cooking, I like to place the tortillas on the bottom rack of the oven to warm them up before serving.

I love these dinner rotations because it’s great to have items on hand that I know everyone will eat! It’s the most important thing ever (at least for me!).
If I do say so myself, I have to say… DON’T FORGET THE BACKYARD COMPANY SALSA!! It’s my husband’s company and it’s the most delish salsa in the world! They have mild, medium, hot and chipolte! I love the mild, but I’m telling you right now – all of them are amazing and delish! Rave reviews on all of them! I feel like it’s the best salsa to add to your yummy easy chicken fajitas.

definitely a perfect summertime meal, colorful, and only uses a few ingredients… no one wants to cook over a hot stove in the summer heat, so the quicker you can make them the better.
