I’m always looking for some delicious summer dessert recipes and nothing says summer dessert like LEMON. I’m obsessed with lemon, so this is a win win for me. My friend Sheri created this incredible Lemon Mascarpone Pie and I’m drooling over how yummy it looks! I’m all about trying new dishes in the summertime and this one just tops all of the recipes for me! It’s not as difficult as you would think, so don’t be caught off guard by these gorgeous photos of the pie all complete! You will definitely be able to make this one, just follow the recipe below!

Let me kick off this post with what exactly Mascarpone is… Mascarpone is an Italian cream cheese coagulated by the addition of certain acidic substances such as lemon juice, vinegar or citric acid.  Even when Sheri first told me about this recipe, it was the first thing I asked her! I wanted to make sure it was something that I had heard of before or at least something I would know what it actually is! The mascarpone is the secret in this pie that makes it so yummy and out of this world delicious! You don’t want to make Lemon Mascarpone Pie without knowing what it actually is, am I right?

Let me work you through what you need for this Lemon Mascarpone Pie! I love to jot these items down in my notes section on my phone and then work through each item while I’m at the market. Make sure you have all of these, there really aren’t any substitutions for these!

8 oz mascarpone cheese

¼ cup heavy cream

½ cup confection sugar

½ tsp vanilla extract

¼ tsp salt

Store-bought graham cracker pie crust (the easiest!)

¾ cup lemon pie filling

½ cup blueberries

Sliced almonds

1 lemon

Ready to get going? Lemon Mascarpone Pie doesn’t have a ton of steps! It’s easy, I promise! There are 4 steps that you need to keep in mind!  I wanted to make sure I gave you not only the steps, but also the images to go along with it, too!

  • Whip together the first 5 ingredients: mascarpone, cream, sugar, vanilla, and salt and set aside.

  • Fill pie crust will the lemon filling.

  • Top with the mascarpone filling and refrigerate for 30 minutes.

  • Finish pie off by topping it with blueberries, sliced almonds and a little bit of lemon zest.

When it comes to creating this Lemon Mascarpone Recipe, you could serve this with some yummy coffee or a dessert wine. I love this recipe for just a regular family night OR if I’m having friends over and need a quick and easy dessert. I love it because even though it sounds super, duper fancy, it’s not nearly as difficult as it sounds! And – lets face it – looks, too!

Another HUGE plus to this recipe? It’s NO BAKE! Insert happy dance right now! No Bake Lemon Mascarpone Pie! Any no baking recipe for me is key in the summer.
