I’m all about ice cream. Live it. Love it. Would eat it every single day if I could. My friend Sheri McShane of When The Kids Go To Bed just sent me the best and coolest recipe for Homemade Ice Cream Sandwich Desserts! These are so great to make for your kids for celebrations or just because! I’m a sucker for a fab summer dessert and this fits the bill perfectly!

When it comes to the summer, the ONLY dessert my kids want to eat is ice cream. It’s pretty unanimous across the board. Ice cream cools them down. Ice cream fills them up. Ice cream is something they enjoy. Ice cream makes everyone happy. I’m all about it because it’s something that I enjoy, too! The funny thing is that because there are so many flavors, everyone in my house likes a different one!

Daddy – Chocolate Peanut Butter

Mommy – Mint Chip

William – Vanilla

Alex – Coffee

Ben – Cookies & Cream

Henry – Cotton Candy

Victoria – Chocolate

When my friend Sheri shared with me this delicious homemade ice cream sandwich dessert, I was all over it because I loved that it was something that would make everyone happy for dessert time! It’s a fun twist on a basic ice cream, it’s a cool way to mix it up and really have some yummy and delicious fun! With so many fun holidays being in the summer, I also love that you can really dress up these homemade ice cream sandwich desserts, too!

What You Need for Homemade Ice Cream Sandwich Desserts:

Ingredients

Store bought cookies (soft-baked ones are easier to work with) *you can make them, too if you’re feel ambitious!
Ice cream of your choosing
Sprinkles
Supplies:
Wax paper
String or tape
Homemade Ice Cream Sandwich Dessert
Steps for Homemade Ice Cream Sandwich Dessert:
  1. Put a generous scoop of ice cream between cookies and gently press down until ice cream reaches the sides of the cookie.
  2. Roll the sides in sprinkles.
  3. Wrap in wax paper and freeze for at least one hour.
  4. Serve.

– Any flavor ice cream
I just love how yummy and delish these are for a summer ice cream treat! It’s just such an easy way to enjoy some cool and refreshing ice cream. I personally am obsessed with chocolate, chocolate cookies with mint chip inside and the covered in chocolate sprinkles. It’s the best treat in the entire world and I personally love it so much!
