These are so great to make for your kids for celebrations or just because! I’m a sucker for a fab summer dessert and this fits the bill perfectly!
Homemade Ice Cream Sandwich Dessert
When it comes to the summer, the ONLY dessert my kids want to eat is ice cream. It’s pretty unanimous across the board. Ice cream cools them down. Ice cream fills them up. Ice cream is something they enjoy. Ice cream makes everyone happy. I’m all about it because it’s something that I enjoy, too! The funny thing is that because there are so many flavors, everyone in my house likes a different one!

When my friend Sheri shared with me this delicious homemade ice cream sandwich dessert, I was all over it because I loved that it was something that would make everyone happy for dessert time! It’s a fun twist on a basic ice cream, it’s a cool way to mix it up and really have some yummy and delicious fun! With so many fun holidays being in the summer, I also love that you can really dress up these homemade ice cream sandwich desserts, too!
What You Need for Homemade Ice Cream Sandwich Desserts:
Ingredients
- Put a generous scoop of ice cream between cookies and gently press down until ice cream reaches the sides of the cookie.
- Roll the sides in sprinkles.
- Wrap in wax paper and freeze for at least one hour.
- Serve.
