These little end of the rainbow cupcakes are so EASY!! I mean – who doesn’t want a little gold and fun at the end of the rainbow??
Some vanilla frosting sprinkled with gold sugar will have your little leprechauns dancing. I purchased AirHead Extremes for the rainbows and they worked out perfectly. The kids LOVED them.
Now I’m going to share a little secret.

Sometimes I just don’t want 2 dozen cupcakes sitting in my house so I get a store-bought package of 6. I scrape off the frosting and then frost them and decorate them myself. It’s the perfect amount! Enjoy everyone!
